I’ve been away from this blog for too long and I’ve got SO much to share! I want to tell you all about the lovely vacation in the Tuscan countryside with my husband, the amazing foods and wines we tried, and the breath-taking places we’ve seen. A few weeks ago, I also visited a dear friend of mine who opened the doors to her family’s distillery — I was able to see how they make grappa! Also, did I mention I’ve got something like 5 recipes waiting to be published?? Let me get back in the groove of things and share one thing at a time, and I promise I’ll try not to let this wonderful season slip away too quickly…I have many more fall recipes to add to the queue. How exciting!
I’ll start with a quick and tasty autumn salad I made by combining few fresh seasonal fruits with mixed greens and small chunks of Parmigiano Reggiano cheese. In a bite or two, your mouth gets a free ride on a roller coaster of textures and flavors, quickly switching from the grapes’ exploding juicy plumpness to the walnuts’ sharp crunchiness; from the cheese’s savory graininess to the pear’s sweet creaminess. It’s quite a sensory experience for something you put together in no more than 10 minutes! As for most of my salads, I simply drizzled it with Aceto Balsamico di Modena and extra-virgin olive oil, and I finished it with a nice sprinkle of salt & pepper.
If you’d like to make the presentation extra-pretty, make sure you use colorful pears and red grapes. Enjoy the ride and stay tuned. More recipes and stories are coming up soon!
- mixed greens
- a handful of walnuts, roughly broken into smaller pieces
- a couple of pears, sliced
- a handful of grapes
- Parmigiano Reggiano cheese, roughly broken into small chuncks
- aceto balsamico tradizionale di Modena
- extra-virgin olive oil
- salt and pepper
- Toss all ingredients together and dress with a drizzle of balsamic vinegar and extra-virgin olive oil. Add salt and pepper to taste.
